Honey Garlic Chicken, Roasted Green Beans & Potato Chips

Your kids are gonna be so excited when you tell them it’s potato chips for dinner! This recipe features chicken in a yummy honey garlic sauce with roasted green beans and crispy potato chips. Serves 4.
Potatoes:
3 medium potatoes
¼ teaspoon salt
Green Beans:
12 ounces fresh green beans, trimmed
1 tablespoon olive oil
1/8 teaspoon salt
1/8 teaspoon black pepper
Chicken:
2 pounds chicken cutlets*
½ teaspoon salt
¼ teaspoon black pepper
¾ cup all-purpose flour
1 tablespoon olive oil
1 tablespoon butter
3/4 cup chicken broth
1/3 cup honey
3 garlic cloves, minced
*Chicken cutlets are boneless, skinless chicken breasts that are thinly sliced open like a book, or pounded out thin between two pieces of plastic wrap.
Preheat oven to 400 degrees F. Line a baking tray with foil. Spray with olive oil cooking spray.
Peel potatoes and slice thinly crosswise (into circles). Sprinkle with salt. Lay in a single layer on baking tray. Put on top rack of oven, and bake until golden brown on the top, about 18-20 minutes. Remove and flip chips over with a spatula. Bake for until golden brown and crispy, about 8-10 more minutes.
Place green beans on another baking tray. Toss with olive oil, salt and pepper. Put tray on a lower oven rack (below potatoes) for 18 minutes.
Season chicken cutlets with salt and pepper. Coat each cutlet lightly in flour.
Heat olive oil and butter in a large pan over medium heat. Place floured chicken in a single layer in pan. Let cook until golden brown on the bottom, about 5 minutes.
Turn chicken over and let cook until golden brown again, about 4 more minutes.
In a small bowl, combine chicken broth, honey and garlic. Mix well. Pour into the pan with the chicken. Let simmer for 5 minutes, turning chicken over in the sauce.
Drizzle the chicken and green beans with honey garlic sauce and serve with potato chips.
